What qualities do you look for in a healthy breakfast? Do you have any go-to breakfast recommendations for a busy mom?
For me, a healthy breakfast includes a good blend of protein and healthy carbs to give me energy to start my day. Some of my favorite healthy breakfasts, that are also quick and easy to prepare, are:
- Greenberry Shakeology blended with frozen berries and almond milk
- Whole wheat waffles with fresh blueberries
- Oatmeal with strawberries and turkey bacon
- Greek yogurt with granola
- Spinach and tomato egg scramble and whole wheat English Muffin
Here is a great egg scramble recipe that I found on Food.com recently (this is for two servings):
- 2 large eggs
- 2 large egg whites
- 1 tablespoon olive oil
- 1 small roma tomato, chopped
- 3 cups baby spinach
- 3 tablespoons crumbled feta cheese, divided
- 1 1/2 tablespoons chopped walnuts, for garnish
- salt & freshly ground black pepper
Directions:
- Whisk together eggs and egg whites and set aside.
- Heat olive oil in large skillet over medium-high heat.
- Saute Roma tomato until slightly tender.
Add egg mixture and scramble until eggs are soft set.

Add baby spinach leaves, stir for 30 seconds, turn off heat and cover skillet for one minute.

Portion on two plates and top with feta cheese and chopped walnuts.
- Season with salt and pepper to taste.
What foods to you enjoy for a healthy breakfast?

One of my favourite breakfasts is really super quick and easy to prepare. Its a fruit smoothie. You can put in any combination of fruits you want. I prefer banana, strawberries, passion fruit pulp(minus seeds, the juice of one orange and a dash of plain yoghurt or vanilla ice cream if you are feeling naughty. Whiz it all up in a blender and enjoy.
i love breakfasts that have lots of protein in them. i workout in the morning so i need the protein to refuel but also to keep me full!
I enjoy having protein shakes, fruit variety, sliced apples with peanut butter, and thinks like that.

love the list! breakfast meals are my favorite, i eat them 4-4 times a day haha. I eat a bowl of Cheerios with a banana and almond milk to start then make a fruit smoothie with pineapple, berries, banana and pure apple juice. Then i have a bowl of all natural oatmeal and then i normally make french toast with using ezekiel sprouted bread with agave syrup and frozen strawberries or a burrito with red potatoes, eggs whites and a sprouted tortilla
After my morning exercise I always drink something be it non-fat milk or water. Aside from that I always have scramble eggs and bacon for my bfast.
