Have you ever been to one of the Scandinavian countries? It’s on my bucket list to visit Norway to see the norther lights. The peak time to see the northern lights in Norway runs between September and late March. The darkest times between December and January are best to see the amazing spectacle. The best viewing time is during apolar night in the arctic circle between November to January. I’m not sure if I could brave the cold, but I’m sure it would be totally worth it.

A friend of mine shared this almond cake recipe with me and now it’s one of our family favorites. I’ll often make it gluten-free using almond flour as well. I recently found the website: New Scandinavian Cooking where I’m experimenting with other regional recipes. I have absolutely no Scandinavian heritage that I know of, but it’s fun to try recipes from around the world.
Scandinavian Almond Cake Recipe
Serves: Makes 2 loaves
Prep time: 15 minutes Bake time: 40-50 minutes
Ingredients List:
- 1 1/4 cup sugar
- 2/3 cup milk
- 1 1/4 cup flour, sifted
- 1/2 cup butter (1 stick)
- 1egg
- 1 1/2 tsp pure almond extract
- 1/2 tsp baking powder


Additional Items
Rehrucken /Almond Cake Loaf Pan- Cooking spray
Instructions
- Melt butter.
- Beat together sugar, milk, egg, and almond extract,
- Combine baking powder and flour to milk mixture.
- Mix in melted butter until thoroughly combined.
- Coat pan with cooking spray.
- Fill the pan with cake batter.
- Bake cake at 350° for 40-50 minutes or until a toothpick inserted comes out clean.
- Set cake pan on a rack to thoroughly cool. Do not try to remove while
cake is warm as it will crack. When cooled, place the pan upside down and tap. Sides can be loosened with a silicone or wooden tool. Do not use metal as it will scratch the pan.
