My family has been invited to the first annual 4th of July party in our neighborhood. So, I want to impress everyone with what I bring along. I’ve signed up to bring some desserts, drinks and a side salad. I’ll also be helping a bit with the decorations. I headed over to my local Price Chopper to shop for my items. They have a great selection with amazing prices too.

Since I typically focus on healthy eating, I wanted to make these recipes as healthy as possible with lower fat and calories than what you might typically find at a family or neighborhood barbecue.

First, I focused on my dessert ideas. I purchased Betty Crocker Low Fat Fudge Brownie mix. With only 3 grams of fat and 140 calories per serving, that’s my kind of brownie. For the kids, I made simple “worms in dirt” cups. Some folks make these with crumbled cookies, but I like that the brownie chunks are easier to eat and less messy. This “recipe” is simply broken up brownie chunks with gummy worms. It could not be easier, and the kids LOVE it! To add to the festive dessert, the kids will get Cool Blue Gatorade. My kids love practically anything blue.

For my adult desserts, I created something a bit healthier. I made what I’m calling The Patriotic Trifle. Ever wonder what the difference is between a parfait and a trifle? I did, so I looked it up. Apparently, a trifle has some sort of cake included, while a parfait does not. I nearly called this dessert the Patriot Parfait (it does have a nice ring to it). This recipe only has about 1/2 a brownie in each serving, which keeps the fat and calories down. Here is my Patriotic Trifle recipe:

Serves 4

  • Two brownies crumbled
  • 2 cups fat free vanilla frozen yogurt
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries

Simply combine the ingredients in layers keeping a red, white and blue theme with the brownie crumbles on the bottom and a few on the top. Ideal if you can serve immediately, but I’ve also kept some in the freezer for 30-60 minutes and they still tasted delicious! Easy peasy as my daughter would say.

Next, I decided to come up with a fun drink for the adults. To go with the patriotic theme, I create a mixed drink using raspberry seltzer, Cool Blue Gatorade, and fresh raspberries. This drink is easy to add alcohol as well. I am all about making recipes that are super easy to replicate. I’m calling this drink the Cool Blue Patriot. Here is the very simple recipe:

  • 1 cup raspberry seltzer
  • 1/4 cup Cool Blue Gatorade
  • 3-5 fresh raspberries
  • 1/2 -1 shot vodka for the alcoholic version

Finally, I made a side salad using Betty Crocker Suddenly Salad. I went with the “classic” version. I love that this is so easy to make. You simple cook the pasta and add the dressing. To keep this recipe a bit healthier, I only used 1/2 of the herb and oil mix. I also use extra virgin olive oil instead of vegetable oil. I added red and yellow peppers to give it a bit more crunch and nutritional content. I love this salad so much that I really don’t mind if I need to bring home the leftovers.
