Chicken Sausage & Rice Makes for an Easy and Healthy Family Meal

Busy moms need access to easy meals. And, who isn’t busy these days, right? This recipe for chicken sausage and rice is great for my family. It even satisfies my picky kids. It has savory flavors Italian sausage and peppers, with a bit of sweetness from organic corn. I’d rather spend time with my family and not in the kitchen, so I aim for dinners that take 30 minutes or less. You bet! By using chicken sausage instead of pork, my family consumes 70% less fat and 30% less sodium. My husband has high cholesterol, so that’s a big deal to me! Where did you get this recipe?

So, how did I come up with this recipe? Well, first I took a look at the al fresco website for inspiration. They have a ton of great recipes to choose from. Next on my list is the Country Style Breakfast Fritatta. My recipe is inspired by the Sundried Tomato Chicken Sausage Risotto. I needed to take into account what I had in the house and what my kids would like. So I created this recipe.

Sweet Italian Chicken Sausage and Rice

Ready in less than 30 minutes, this is an easy family meal featuring chicken sausage, peppers, and sweet organic corn. Even picky eaters love this one!

  • 1 tbsp olive oil
  • 1 package al fresco Sweet Italian Chicken Sausage
  • 1/4 clove garlic
  • 1.5 cups rice uncooked
  • 1/2 cup red pepper chopped
  • 1/3 cup corn
  • 3 cups chicken broth
  • 1 tsp basil


  1. Heat the olive oil in a large skillet.

  2. Add chicken sausage and cook over medium heat until browned.

  3. Remove chicken sausage from skillet, slice into 4-6 pieces. Set aside.

  4. Add garlic and rice to skillet. Stir constantly until rice is lightly browned.

  5. Add peppers and corn

  6. Continue cooking until peppers are tender

  7. Stir in chicken broth and basil

  8. Bring to a boil; cover and simmer for about 15 minutes.

  9. Gently stir in chicken sausage and continue simmering until rice is tender.

Recipe Notes

When I'm not making this one for the kids, fresh spinach makes for a great addition.
