Back to School time is in full swing. Along with school schedules, many families need to juggle extracurricular activities as well. In my family, we have soccer, dance, and gymnastics multiple days a week. With homework and playdates also on the schedule, getting my kids to eat a complete and healthy dinner can be challenging. Quick and easy dinner recipes need to be a major part of my life right now.

I went to Price Chopper to find some Back to School dinner ideas for my family. I concentrated on finding the “on-the-go” meals I often need to make this time of year. I am always on the lookout for meals that are nutritious, easy to make, and inexpensive. Price Chopper is a great place to find groceries to meet all of these requirements. Their prices are terrific so I really love the savings as well.

Since some sports start as early as 5:00, my kids are usually not yet ready for a full dinner. I often make mini-meals that will keep them full until they return from their activities later in the evening. Although these meals may be a bit smaller, I make sure they have some protein, fruit and vegetables. A recent favorite we found at Price Chopper is the Jimmy Dean Pulled Pork. I make Pulled Pork Sliders with mini rolls and a sprinkle of cheddar on top. I pair these sandwiches with carrot sticks and fruit and the kids are good to go.

Pulled Pork Sliders

  •  Small dinner rolls
  • Jimmy Dean Pulled Pork – 1 box makes about 4-5 sliders
  • 1/4 cup shredded cheddar cheese

Simply cook the Jimmy Dean Pulled pork as per box instructions. Add a scoop to each dinner roll and sprinkle some cheddar cheese on top. Instant yummy meal!

Another favorite are our “Ham, Fruit & Cheese Kabobs” as my daughter calls them. We used the Hillshire Farms Naturals Honey Roasted Ham to wrap melon and top with chunks of mozzarella cheese. I like that the Hillshire Farms Naturals have no artificial ingredients or nitrates.

Ham, Fruit & Cheese Kabobs

  •  About 4-5 slices of Hillshire Farms Honey Roasted Ham
  • 1-2 cups cubed melon
  • 2-3 mozzarella cheese sticks

Simply wrap each cube of melon with a piece of ham. Secure with a toothpick and add a piece of mozzarella. Easy peasy and quite yummy!

My kids sometimes come home from school needing a boost of hydration to get started on their homework. I decided to try the Capri Sun Super V fruit and veggie drink. They had no idea that this was a veggie/fruit juice combo. I made a slush blending the capri sun with ice and the kids loved them.

Capri Sun Super V Slush

  •  2 Capri Sun Super V bags per slush
  • 1-2 cups ice

Blend to create an ice cold slush and enjoy!

As I mentioned earlier, the weekdays can get pretty busy. If we don’t sit down as a family for dinner, we make it a point to sit down together for dessert to chat about our day. My daughter and I created “Blueberry Betties” using small cake cups, Blueberry Yoplait Greek 100 and fresh blueberries. My daughter says, “This is the best dessert in the world!” At less than 200 calories, I agree!

Super Easy Dinner (Dessert) Recipe #4

Blueberry Betties 

Makes 4

  •  Small shortcake or angel food cake cups
  • Blueberry Yoplait Greek 100 
  • 1/2 cup fresh blueberries

Scoop even portions of  yogurt into each cake cup. Sprinkle with fresh blueberries. Chill for about 30 minutes to make them extra cool and refreshing.
