Enjoy “Me Time” with a Pudding Parfait

If you are a busy mom like me (who isn’t these days?), it’s challenging to find some time for yourself. When we are not shuttling the kids to school and extracurricular activities, we are often working, grocery shopping, doing laundry, cleaning house, etc. Even 5 minutes of quiet time can make a huge difference.

How do you spend your quiet time between the daily hustle & bustle of your life? After I get the kids off to school and maybe run an errand or two, I try to spend 10-20 minutes of quiet time. I’ll often wrap myself up in my favorite blanket and have a snack while reading a good book. It’s time I cherish where I can really enjoy myself and be in the present moment.

Recently, I tried new Café Breaks – an indulgent upscale pudding cup – as my snack of choice. They come in tantalizing flavors like Mocha Latte and Caramel Latte. Doesn’t that sound decadent? They are full of flavor, yet only 100 calories. Yippee! I can indulge and not feel guilty. It’s like a caramel macchiato in a glass! YUM!!

To create extra special “me time,” I made a pudding parfait using both Café Breaks flavors. It’s super easy to make:

  1. One packet – Café Breaks Caramel Latte
  2. One layer crushed graham crackers – you could try pretzels for a sweet/salty combo too!
  3. One packet – Café Breaks Mocha Latte
  4. Top with fresh fruit! – sliced almonds is another option I like.

Cafe Breaks also make for easy on-the-go snacks too. I can grab one for the car while I wait in the school pick-up line. You can find these two flavors at your local Walmart in the snack aisle near other pudding products.

Another option I love is a parfait with vanilla pudding and mixed berries like this one. Simply use your favorite berries, and layer with the pudding and granola. I hope you will pin it for inspiration. YUM!!
