I personally find that I have more energy and less of a crash in the afternoon when I eat gluten free, especially early in my day. I also have a number of friends who can’t eat gluten, so I like to experiment with new recipes I can use when they come to visit. Both ladies are in my book club so they really appreciate when I provide a gluten free option or two.
Recently, I learned that Walmart has a wonderful collection of gluten free products. They even hosted gluten-free event across the country helping to educate their customers about these products. Walmart has a great variety of gluten free products from pizza to cookies, chips, breads and more. I decided to try the LUNA bar line from Clif Bar.

While I love a good snack bar, I also like to get creative with my recipes and repurpose snack bars into another recipe. That said, I also like creating recipes that are super easy to make. I came up with the idea for Coconut White Chocolate Macadamia Protein Balls. The LUNA bars already have 9 grams of protein, but this snack kicks it up a notch with greek yogurt and coconut. Here is my creation broken down step by step. I used 2 LUNA bars to create 8 balls. Each ball is quite filling so I’d say this serves 3-4 people or freeze them for future use.
- 2 Coconut Macadamia LUNA Bars
- 2 tablespoons greek yogurt
- 1/2 cup coconut flakes
- Microwave LUNA bars for 10-15 seconds to soften
- Crush with fork on flat surface then add to bowl
- Add yogurt and coconut
- Form into golf ball size balls
- Chill in refrigeration for about an hour
