Ah, banana bread. Just saying those words makes my mouth water a little bit. I can even smell the lovely aroma of bananas with a hint of cinnamon. Darn, now I am making myself really hungry. You with me? How about a gluten-free dairy free version? For tummy-sensitive folks like me, it’s amazing. For regular peeps, you won’t be able to tell the difference.
When my husband makes a regular flour/butter version of banana bread, I am so jealous. I don’t know why I didn’t try to find a gluten-free dairy-free banana bread recipe before. Perhaps I was just being lazy.
So the other day, I noticed a box of gluten-free cake mix I picked up from Whole Foods. Looking at some rather brown bananas on the counter, I thought to myself there must be a way to use them for banana bread. I found a few ideas on the internet and did a combination to create my own recipe. It is super easy to make too!
I popped on an episode of My Favorite Murder and got to work. Have you ever heard of My Favorite Murder? It’s a true-crime podcast with a twist of comedy. If you haven’t tried it, give it a listen and let me know what you think. You have to get used to the witty banter between the two hosts (Georgia Hardstark and Karen Kilgariff), but once you do, you’ll grow to love them.
Health Benefits of Bananas
Keep in mind the health benefits of bananas too. Bananas are a very good source of vitamin B6 and a good source of manganese, vitamin C, potassium, dietary fiber, potassium, biotin, and copper. With this banana bread, no banana goes to waste! This recipe uses 2 full bananas. YUM!
