Easy Gluten Free Dairy Free Banana Bread

Ah, banana bread. Just saying those words makes my mouth water a little bit. I can even smell the lovely aroma of bananas with a hint of cinnamon. Darn, now I am making myself really hungry. You with me? How about a gluten-free dairy free version? For tummy-sensitive folks like me, it’s amazing. For regular peeps, you won’t be able to tell the difference.

When my husband makes a regular flour/butter version of banana bread, I am so jealous. I don’t know why I didn’t try to find a gluten-free dairy-free banana bread recipe before. Perhaps I was just being lazy.

So the other day, I noticed a box of gluten-free cake mix I picked up from Whole Foods. Looking at some rather brown bananas on the counter, I thought to myself there must be a way to use them for banana bread. I found a few ideas on the internet and did a combination to create my own recipe. It is super easy to make too!

Keep in mind the health benefits of bananas too. Bananas are a very good source of vitamin B6 and a good source of manganese, vitamin C, potassium, dietary fiber, potassium, biotin, and copper. With this banana bread, no banana goes to waste! This recipe uses 2 full bananas. YUM!

Gluten Free Dairy Free Banana Bread

Grab a box of gluten free cake mix and a few other ingredients and you're ready to go!

Ingredients

  • 1 Box Gluten Free Cake Mix I used the whole foods 365 brand
  • 1/2 cup oil I used sunflower oil
  • 2 large eggs
  • 1/2 cup non dairy of your choice I used almond milk
  • 1 tsp cinnamon
  • 1/2 cup chopped walnuts optional

Instructions

  1. Preheat oven to 350 degrees F

  2. Add all ingredients into a deep mixing bowl

  3. Use a stand mixer to combine all ingredients thoroughly

  4. Use oil, cooking spray or a non-dairy butter alternative to grease 9×4 loaf pan.

  5. Pour ingredients into your greased loaf pan

  6. Bake for 1 hour to 1 hour and 10 minutes. Check with tooth pick or knife to make sure it comes out clean.
