What is your favorite healthy recipe? I love banana bread! It’s so easy to make and great for using bananas that may have become too soft for other uses. Banana bread is a relatively healthy treat, but the eggs and butter typically used in the recipe can make the calories and fat add up quickly. Here is a healthier version that is just as delicious, but quite a bit lower in fat and calories. Enjoy!
1 1/2 cups all-purpose flour
3/4 cups sugar
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
2 egg whites
1 cup mashed bananas
1/4 cup applesauce
1. Preheat ovent to 350 degrees. Lightly grease an 8×4 inch loaf pan.
2. In a large bowl, combine the sugar, flour, baking soda, baking powder and cinnamon.
3. Add egg whites, bananas, and applesauce. Stir until combined. Pour batter into prepared pan.
4. Bake for 50-55 minutes. Turn onto wire rack for cooling before slicing.
Keep in mind the health benefits of bananas too. Bananas are a very good source of vitamin B6 and a good source of manganese, vitamin C, potassium, dietary fiber, potassium, biotin, and copper.
