Create “Un-wiches” instead of sandwiches
After a sandwich bumps around in a backpack, it can look like a house dropped on it. With un’wiches, there’s no bread to get squished; it’s all yummy fillings. Like all-natural deli meats and cheeses, organic apples — even sweet potatoes. Anything goes, as long as it’s sturdy. My kids love these ham wrapped apples, for example.
Pack Dips & Dippers
My daughter often wants a lunch full of “snacks” instead of a full lunch. Filling her lunchboxes with bite-sized nibbles packed with the energy and nutrition is the way to go for my daughter. For example, I pack foods that she can dip in hummus or guacamole.
Pack a lunch with lots of “Mighty Minis”
A lunchbox filled with lots of interesting options is both easy to eat and inspirational. My son loves these mini “sandwiches” made with crackers, turkey, spinach, cream cheese and dried cranberries.
You can make a few different mini combinations on Sunday and let the kids mix and match their lunch all week. It really helps me stay organized and get us all out of the house on time for the bus and carpool.
