If you are like me, casseroles bring back memories of family gatherings. Tuna noodle casserole is a comfort food for me, which conjures memories of fun meals with my cousins sitting at the “kids table.” The only problem is that the typical tuna casserole recipe is pretty high in fat and calories. I’ve taken a healthy spin on this classic recipe featuring Hood® Light Sour Cream.
If you missed my post last month, I shared that the folks at Country 102.5 have partnered with Hood® Sour Cream for a fantastic contest. Share your favorite fast family meals using Hood® Sour Cream and you could win terrific prizes like Peapod gift cards, concert tickets and a week’s worth of chef prepared meals. Isn’t that awesome?
My recipe is inspired by this winning photo from a recent contest entry. What I love about my recipe is that it is super easy to make. Fast family meals are the way to go in my house. I want to spend more time with my family and less time in the kitchen. Besides, my kids are so busy after school that we often need to squeeze in a quick meal between homework and other activities.
To make this recipe a bit healthier, I used Hood® Light Sour Cream, 1% milk, low fat cheese, and a plant-based butter substitute. This gives this recipe much less fat and calories. Don’t worry, it’s still big on taste.
Isn’t that easy peasy? If my grandmother could see me now. She would be so proud! The Hood® Sour Cream site has lots of fast and easy recipes too. I trust the taste and quality of the recipes I make with Hood® Sour Cream. I like that they are a business local to me with more than 160 years in the dairy business. I also appreciate that Hood® Sour Cream is all natural, with no preservatives or artificial ingredients.
