Weeknights in fall are crazy in our house. Both of my kids have after school sports 3-4 times a week. I need to make quick and easy meals that are hearty to give them the energy they need. As the weather turns chilly, a family favorite is chili. I was excited to find out that October is National Chili Month. For chili lovers like us, we are thrilled to join in the celebration. For a busy mom like me, I love that there are three delicious chilis from Progresso that are super easy to make. In fact, they can be ready in less than 5 minutes. Yippee!
Here are the 3 delicious flavors from Progresso Chili:
- New! Roasted Vegetable Chili with 3 Beans
- Smokehouse Pork and Beef Chili
- White Chicken Chili with Beans
I cooked up all three varieties for my family to try. I asked everyone to come up with a unique way to enjoy their chili so I could share their ideas with my readers. Here’s what we came up with for our Progresso Weeknight Meals:
Smokehouse Pork and Beef Chili Sliders
Both my husband and my son came up with the idea to use the Progresso Pork and Beef Chili to make sliders for their meal. My husband says he will be making these again to enjoy on game days too.
Roasted Vegetable Chili with 3 Beans Over Rice with Guacamole
I am loving this flavor. This is a meat-free option that includes tomatoes, carrots, roasted corn, peppers and onions; and pinto, black and dark red kidney beans. It is so yummy. I poured mine over some rice pilaf and topped it with guacamole. Delish!!
White Chicken Chili with Beans with Fresh Bell Peppers and Cherry Tomatoes
My daughter and I also love this flavor. She thought it would be fun to top with some fresh bell peppers and cherry tomatoes. She said, “look how pretty it is mom!” That pop of color added some delicious flavor and a fun bit of crunch. I love dipping dinner rolls in this one too! So good!
