Is your family into sports? We are in our house. Our kids play soccer and gymnastics. We love watching football as a family too. Monday Night Football is a favorite. We like to create fun family meals where we can watch the games together. Recently, I heard about taking a #MeatlessMondayNight challenge so I decided to give it a try with my family.

Have you ever tried going meatless? It’s easier than you might think. Even if you are a meat lover, you can adopt a more plant-based diet by making small changes. Consider a meatless meal once a week or swapping out some dairy milk for an alternative like soy, almond or cashew milk.

More and more people are recognizing the benefits of meals based on fruits, vegetables, nuts and grains. I recently decided to switch to Silk Almond Milk in my tea and most recipes that call for dairy milk. I’m getting my family to give it a try in our Monday Night Football recipes too. Tonight, I made a delicious red potato salad using Silk Almond Milk inspired by their recipe page. It is so good, and it’s super easy to make.

    Oh man…
    I wish I’d have had this recipe 2 weeks ago. My mother-in-law was visiting and is dairy free. She couldn’t eat the potato salad I made and was kind of bummed. I’m keeping this for next time!
