I love nothing more than a super easy meal. When it comes to a simple dinner, one pan meals are the best! Bonus points that veggies are cooked right alongside in the same pan. This recipe for balsamic chicken is delicious! Even my picky kids like it. With just a little prep the night before, this is a great meal to throw together when you’re short on time. One skillet balsamic chicken
- 4 Pounds chicken
- 4 Tbsp balsamic vinegar
- 2 Tbsp honey
- 1 Tbsp olive oil
- Seasoning mix to taste
- 1 Cup steamed broccoli
- ½ Cup grated red cabbage
Marinate chicken in a zip-lock bag in vinegar, honey, oil and seasoning mix, shake and refrigerate overnight or 8 hours. Heat a skillet and add the chicken with the marinade. Cook for 10-20 minutes over medium-low heat. Add vegetables to cook with the chicken for the last 5 minutes.
