Spinach & Feta Egg White Frittata Cups

I am always on the search for healthy breakfast options. My friend taught be this delicious recipe for Spinach and Egg White Frittata Cups. They are super easy to make and freeze well to be reheated. Perfect for a single serving for a quick energy boost packed with protein!

12 egg whites
1/2 cup skim (or low fat) milk
Pinch of salt and pepper
1 cup of washed and chopped spinach
1/2 cup of feta cheese
1/2 cup diced red onion

Preheat oven to 375 degrees.

Grease a muffin tin (makes 12 cups).

Place egg whites in a large bowl.

Add milk, while whisking egg whites.

Continue to whisk, until frothy.

Add salt and pepper, to taste.

Add spinach, onion, and then feta.

Stir until mixed evenly.

Full muffin tins with mix.

Bake for 20-23 minutes.

Serve immediately, and enjoy.
