No Sugar Mini Banana Date Scones

In my quest to reduce sugar from my diet, I am trying new recipes. I started this recipe as a no sugar muffin. Using whole wheat flour made for a denser consistency so I’m calling these mini-scones instead. They are terrific with a morning cup of coffee or tea. The sweetness of the banana and dates really make sugar an unnecessary additive. Just adding a bit of cinnamon made for a very tasty treat to satisfy my sweet tooth.

Delicious scones with sweet bananas and dates makes 12 mini-scones
Ingredients
  • 3 lg. bananas
  • 1 tsp cinnamon
  • 1 egg
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1 1/2 c. organic whole wheat flour
  • 1/3 c. melted butter
Instructions
  1. Mash bananas.
  2. Add cinnamon and slightly beaten egg.
  3. Add melted butter.
  4. Sift dry ingredients together and add to above mixture.
  5. Mix until moistened.
  6. Bake at 375 degrees for 20 minutes.
