When I know my day will be super busy, I try to have a healthy breakfast with lots of protein to fuel me up for the day. I decided to try a Ghouda and Veggie Omelet. It is super yummy and satisfying.
For this recipe you will need:
- 3 eggs or combo of egg/eggwhite as per your preference
- 1/4 cup diced tomato
- 1/4 cup spinach or mixed greens
- Half a red bell pepper
- 1/4 of an onion
- Cilantro
- Black Pepper
- Tiny bit of milk
- Gouda cheese – I love Arla Dofino
Chop your veggies. Put the cilantro and a handful of the diced tomatoes to the side for the omelet topping. Pan cook the veggies for about 5 minutes to soften them up.
Put the cooked veggies aside and slice the Ghouda cheese. Combine the eggs with a splash of milk and fresh pepper (to taste). Spread a bit of vegetable oil on your pan with a paper towel. I recommend a green ceramic non-stick pan too. Make sure the pan is on about medium high before you pour in your eggs. You want them to sizzle a bit when the hit the pan.
Add in your veggies and cheese. I decided to try my fillings in the middle to do a tri-fold omelet. You can do veggies on one side and then do a half fold. Either way is fine. The cheese melted nice and smooth in the center of the omelet.
Reduce your heat to medium and fold the omelette, making sure your bottom does not burn.
And Viola! This is truly one of the best omelets I’ve ever made.
