When I know my day will be super busy, I try to have a healthy breakfast with lots of protein to fuel me up for the day. I decided to try a Ghouda and Veggie Omelet. It is super yummy and satisfying.
For this recipe you will need:
- 3 eggs or combo of egg/eggwhite as per your preference
- 1/4 cup diced tomato
- 1/4 cup spinach or mixed greens
- Half a red bell pepper
- 1/4 of an onion
- Cilantro
- Black Pepper
- Tiny bit of milk
- Gouda cheese – I love Arla Dofino
Chop your veggies. Put the cilantro and a handful of the diced tomatoes to the side for the omelet topping. Pan cook the veggies for about 5 minutes to soften them up.
Put the cooked veggies aside and slice the Ghouda cheese. Combine the eggs with a splash of milk and fresh pepper (to taste). Spread a bit of vegetable oil on your pan with a paper towel. I recommend a green ceramic non-stick pan too. Make sure the pan is on about medium high before you pour in your eggs. You want them to sizzle a bit when the hit the pan.
Add in your veggies and cheese. I decided to try my fillings in the middle to do a tri-fold omelet. You can do veggies on one side and then do a half fold. Either way is fine. The cheese melted nice and smooth in the center of the omelet.
Reduce your heat to medium and fold the omelette, making sure your bottom does not burn.
And Viola! This is truly one of the best omelets I’ve ever made.

My favorite is the havarti and ham waffle sandwich(http://www.pinterest.com/pin/258394097346593273/) because I like breakfast foods that can be eaten in a hurry, not at a table with a plate and fork.
This looks so yummy. I love the addition of Gouda. Going to try it!
I chose the hot ham and cheese waffle sandwich.

That looks so good. I love Gouda cheese.
I’ve never had Gouda cheese before. I’m allergic to blue cheese though. Is it in the same family?
Gouda is a soft cheese more like Havarti.
Well, the pin for the one I picked linked to the homepage of a person’s blog and then I had to search for it. They really need to make it easier for a person to get to a recipe…..

It looks like a really tasty and easy meal to make. Not find mind you but make 😉
http://www.pinterest.com/pin/79516749646662206/ I chose this one because my husband is a mushroom fanatic, and we all love bacon, also I have not tried a recipe like this before and it is good to try new things. Sounds YUMMY!
The http://www.pinterest.com/pin/79516749646662209/ because I love cornbread and chili together. I never thought to add some cheese to it to give it a little kick and more flavor.
Okay first of all I am having my morning toast right now, which I always either have with fresh fruit on its own or with eggs, which I love but you nailed some of my favorite things here – Gouda! YES! Especially a smoked Gouda. Cilantro and tomato YES! The onion meh I can take it or leave it – but if I take it I have to sauté it first as raw onion or undercooked makes me feel off. Alright – that’s it – I’m making this omelette right now. 🙂
You really made the perfect omelette, I’m jealous! Loved the Havarti recipes (it’s my favorite cheese) from the Pinterest board: http://www.pinterest.com/pin/79516749646662198/
Grilled cheese has my name on it – http://www.pinterest.com/pin/194006696423873805/
http://www.pinterest.com/pin/79516749646662206/ This look amazing and is totally what I’d love to try.
I chose the Mushroom Meatball and Bacon Hero with Melted Creamy Havarti Slices here: http://www.pinterest.com/pin/79516749646662206/ because melty cheese & smoky meats on bread? Perfect.
I’m usually not a big meatball person but the idea of the salmon really intrigues me!
