Broccoli Cheddar Vegetable Soup

  • 2 Tbsp butter
  • 1/2 cup chopped onion
  • 2 cups finely chopped carrot
  • 1 celery stick finely chopped (feel free to add more if you like)
  • 2 Tablespoons minced garlic
  • 8 cups chicken broth
  • 4 large baking potatoes peeled and chopped
  • 2 Tablespoons flour
  • 1 cup water
  • 1 cup milk
  • 4 cups chopped broccoli
  • 4 heaping cups shredded cheddar cheese


  1. Melt the butter in a large soup pot. Adding onions and sauté until translucent.
  2. Add carrots, and celery and cook over medium heat until tender.
  3. Add garlic and cook an additional 1-2 minutes.
  4. Add potatoes and chicken broth, bring to a boil, and cook until potatoes are slightly tender.
  5. Mix flour with water, add, and simmer until soup is slightly
  6. thick.
  7. Add milk and broccoli and simmer until broccoli is just tender and soup is heated through.
  8. Stir in cheese and allow to fully melt.
