Tuna Stuffed Avocado Boats

  • 2 cans 4.5 ounce tuna
  • 2 large ripe avocados
  • 1/4 red onion finely diced
  • 6 pitted green olives chopped
  • 2 tbsp fresh parsley finely chopped
  • 8 sun dried tomatoes (packed in oil) drained and chopped
  • 2 tbsp fresh lime juice
  • Kosher salt
  • ground pepper


  1. In a medium mixing bowl, empty tuna cans and break apart with fork. Stir in and combine onion, olives, tomatoes, parsley and 1 tbsp lime juice. Season with salt and pepper to your taste. 

    Halve and pit the avocados. Scoop the tuna mixture into the pitted avocado halves. You may need to remove a small amount of avocado to make more space for the tuna mixture. Drizzle the second tbsp of lime just over top or squeeze a fresh lime slice for a "spritz" effect. 

Recipe Notes

While this recipe is ideally served immediately, I found that cling wrap kept the "boats" fresh for a few hours.
